Beringela recheada com caril de batata e molho Tzatziki \\ Aubergines stuffed with potato curry and Tzatziki sauce



Esta receita é adaptada de um dos meus livros preferidos de sempre: Potatos – from gnocchi to mash. E ultimamente este livro tem-me dado um jeitão. Quando, há umas semanas atrás, o m. me aparece em casa com uma saca (sim saca, daquelas tão pesadas que se levam ao ombro, tal qual agricultor) carregada de batatas, eu nem queria acreditar. Eu até gosto de batata mas não havia maneira de dar vazão àquela quantidade astronómica. Claro que dei algumas a uns amigos e família e, como é óbvio fartei-me de usar batatas nas nossas refeições. Uma das receitas que fiz foi então estas beringelas recheadas. A combinação é bastante interessante pois à primeira vista não nos passa pela cabeça juntar beringelas com batatas e com especiarias indianas. Mas desde a primeira vez que experimentei que fiquei completamente rendida. E hoje foi dia de fazer de novo e partilhá-la convosco. Introduzi uma pequena alteração ao molho que a receita original pedia: um molho de iogurte aromatizado com cominhos que eu alterei para um molho tipo tzatziki, com iogurte, pepino ralado e hortelã.

This recipe is adapted from one of my favourite books ever: Potatos – from gnocchi to mash. And lately this book has been very useful. When a few weeks ago m. arrived home with a huge bag (as those that you carry on your shoulder, like a farmer) loaded with potatoes, I just couldn’t believe it. I like potatoes very much but there was no way I would be able to use up that entire amount. Obviously I gave some to a few friends and family, and I certainly made a lot of potato dishes. One of the recipes I made was these stuffed aubergines. This combination is quite interesting and it doesn’t really come to your mind putting together aubergines and potatoes with Indian spices. But since the first time I experienced that combination I was completely surrendered to it. And today I did it again and decided to share it with you. I’ve introduced a small change to the original recipe sauce: a yogurt sauce flavoured with cumin that I changed to a kind of tzatziki sauce with yogurt, grated cucumber and mint.




Beringelas recheadas com caril de batata e molho Tzatziki

2 beringelas
4 batatas, descascadas e cortadas em cubos de 1cm
4 c.sopa de azeite
1 c.sobremesa de cominhos
1 c.chá de curcuma
1 c.chá de coentros em pó
1 cebola, descascada e picada
2 dentes de alho, descascados e picados
1 c.chá de gengibre fresco ralado
1 chilli encarnado, picado
Sal a gosto
Sumo de 1 lima

Para o molho Tzatziki:
125gr de iogurte grego
1 pepino pequeno, sem casca nem sementes
1 mão-cheia de hortelã picada
Sal e azeite a gosto




Pré-aqueça o forno a 200ºC. Corte as beringelas ao meio no sentido longitudinal. Com a ajuda de uma colher, retire a polpa e corte-a em pedaços com 1,5cm. Polvilhe o interior das beringelas com sal e deixe repousar durante 30 minutos sobre um escorredor (com o lado da casca para cima). Entretanto, coloque um tacho ao lume com água fria e sal e coza as batatas durante 10 minutos (contados após a água ferver). Escorra as batatas e deixe arrefecer. Passe as beringelas por água e limpe bem com papel absorvente. Coloque as beringelas com ao corte virado para cima num tabuleiro, deite um fio de azeite (2 c.sopa) por cima e leve ao forno durante 15-20min.
Aqueça as restantes 2 c.sopa numa frigideira grande e salteie a cebola, o alho, o gengibre, o chilli e as especiarias durante 5 minutos. De seguida adicione os cubos de beringela e salteie durante mais 5 minutos. Junte os cubos de batata e salteie tudo por mais 5 minutos ou até as batatas estarem douradas. Retire do lume e esprema o sumo da lima por cima. Ajuste o sal se necessário.
Recheie as beringelas com o caril de batata e leve novamente tudo ao forno durante mais 10 minutos.
Prepare o molho Tzatziki começando por ralar o pepino e escorre-lo muito bem. Depois misture o pepino com o iogurte, a hortelã e um fio de azeite. Tempere com um pouco de sal.
Sirva as beringelas recheadas com o molho Tzatziki.

Aubergines stuffed with potato curry and tzatziki sauce

2 aubergines
4 potatoes, peeled and cut into 1cm cubes
4 tbsp olive oil
1 tbsp cumin
1 tsp turmeric
1 tsp ground coriander
1 onion, peeled and chopped
2 cloves of garlic, peeled and chopped
1 tsp grated fresh ginger
1 red chilli, chopped
Seasoning
Juice of 1 lime

For the sauce Tzatziki:
125gr of Greek yogurt
1 small cucumber, peeled and deseeded
1 handful of mint, chopped
Salt and olive oil to taste



Preheat oven to 200 º C. Cut the aubergines in half lengthways. With the help of a spoon, remove the flesh and cut into 1.5 cm pieces. Sprinkle the inside of aubergines with salt and let stand for 30 minutes on a colander (cut side down). Meanwhile, place a pan on the stove with cold water and salt and cook the potatoes for 10 minutes (after the water boils). Drain the potatoes and let cool. Rinse the aubergines and wipe well with kitchen paper. Put the aubergines cut side up on a tray, pour a little olive oil (2 tbsp) on top and bake for 15-20min.

Heat the remaining 2 tbsp in a large skillet and sauté the onion, garlic, ginger, chilli and spices for 5 minutes. Then add the diced aubergines and sauté for another 5 minutes. Add the potato cubes and stir it for 5 minutes or until the potatoes are golden. Remove from the heat and squeeze the juice of lime on top. Adjust salt if necessary.

Fill the aubergines with the potato curry and return to the oven for another 10 minutes.
Prepare the Tzatziki sauce by grating the cucumber and pressing it well so that all the water is removed. Then mix the yogurt with the cucumber, mint and a drizzle of olive oil. Season it with salt.
Serve the stuffed aubergines with the Tzatziki sauce.
